We added peas to the succotash recipe we used from &lt;a href="http://astore.amazon.com/vegansoapbox-20/detail/1579546188/"&gt;Ethnic Vegetarian&lt;/a&gt;*. And we used vegan margarine instead of butter. Succotash is incredibly easy to prepare. And it's also pretty low in calories (unless you eat it with cornbread).&lt;br /&gt;&lt;br /&gt;*I was vegetarian before I went vegan so I have a lot of vegetarian cookbooks.
